This white bean & roasted red pepper dressing is essentially a bean dip, thinned out to make a dressing. This is a protein-packed way to flavor your salad. It would go great with an avocado-cucumber-tomato salad, or simply tossed with some white beans.
White Bean & Roasted Red Pepper Dressing
Servings: 4 ounces
Ingredients
- 1/2 cup white beans cooked or canned (1/3 of a 15oz can)
- 1/4 cup roasted red peppers
- 1 clove fresh garlic
- 2 Tbsp fresh parsley
- 2 Tbsp red onion
- 2 Tbsp lemon juice
- 2-4 Tbsp water
Instructions
- Puree everything together in a small blender or food processor until smooth.
